Grey’s Discovery Alfredo Sauce

Hey gals and guys,

I’ve been home alone all weekend eating hot dogs and yogurt, but today, I realized that I know how to cook. Major epiphany, right? Anyway, I decided to have chicken alfredo and a Delmontico house salad. I tried out an experimental alfredo sauce recipe, which went splendidly. This fall, when I move into my new apartment, I plan to have some people over to apartment warm… I”m cooking this again.

Grey’s Discovery Alfredo Sauce.

Before starting, grate about two good hands full of cheese. White cheese. I didn’t actually use any alfredo. I used Parmegiano Reggiano and Pecorino Romano.

1 stick butter in saucepan. Melt it. Medium heat. Add 1 whole 8 oz package of cream cheese. Whisk until smooth. Take off heat just long enough to turn on some jazz (I suggest Sonny Clark. I’ve been listening to “Softly, like a Morning Sunrise” for an hour.) After the jazz, add about 1 cup of chicken broth. Turn heat to med. (I use chicken broth to cook pasta because it gives better flavor, so I just took a cup from the pasta I was cooking.) Continue to whisk. Add 1 handful of grated cheese. Whisk more. Add another handful of cheese. Whisk then allow to sit for about 5 minutes. Before you whisk again, add a splash of red wine to the cheese sauce and the pasta. (Gives pasta a surprisingly meaty flavor… and smells heavenly. 2007 was a good year.) Add black pepper to taste.

Best part? It takes around 15 minutes from start to finish and only uses 1 pot.
